 Will the mandarin I have been learning (american university) be similar to-?
the mandarin spoken in the Sichuan province, or in the southwest of China in general? I would love to get as fluent as possible, and Chengdu seems like an appealing city, and you can't beat immersion, can you?
Any other information on the regional dialects of southwestern China?

In Sichuan Province people speak various dialects of this province, depending on where you go to. In other provinces it's the same, they speak dialects. However, if you talk with the people they will all speak Mandarin with you. You may find a few words that they pronounce differently but it will not be all that difficult to understand. Don't worry, you'll be fine there and you'll pick up very quickly on your Mandarin in this environment.

If you have studied a little mandarin spoken. I don't think you have problem in sichuan.maybe there are some accent ,but most of the people in sichuan could say mandarin to you.
and if you are not confident for your mandarin spoken,I suggest you can learn it online,and talk to the native teachers from china to confirm whether your mandarin is enough for leaving in China.you can see this website,and now its free,i think it 'll be free a longtime,maybe.Good luck and welcome!

The mandarin you are learning in the US is very likely Beijing mandarin (putonghua), or possibly Taiwan mandarin (guoyu), which amount to the same thing. The tones are very consistent.
The mandarin spoken in Sichuan does have an accent, and tones shift a little but the biggest area of concern being the tendency to collapse certain sounds for example, si (four) and shi (ten) spoken with a Sichuan accent end up sounding almost the same to the Beijing mandarin ear.
Take care to distinguish: si/shi, zi/zhi, nuo/luo and other similar sounds.
Do PUSH yourself to hear the difference, even if you can function without it. If you can train yourself to hear the difference, then can make the distinction yourself when you speak, should you choose to.
(Think how odd or distracting we might find it if Chinese diplomats or businessmen spoke English with a Southern drawl. The bias isn't fair, but you should be aware of it.)
But otherwise it's not a big problem. And if you can get good at being able to understand other regional accents, you will be one up against your average Beijinger. ;-)
Chengdu is a fantastic city, I have had friends who studied there. Amazing food, wonderful people, lots of opportunity as China 'develops the West'. (Sichuan, Xinjiang, Gansu, Qinghai, Yunnan, etc.,)
You will get a better immersive experience there than in Beijing right now. Too many foreigners studying Chinese in Beijing and too many Chinese wanting to practice their English. Lol!

there are too many dialects..but just go with mandarin

I don't think you will have any problem. I'm not fluent and haven't been to Chengdu for 10 years..... From what I recall there were differences but I wasn't able to distinguish them and people there were nice enough to help out.
There are some Tibetan dialects spoken but I think it's mostly in the rural areas.

SichuanHua is a branch of Mandarin, using the same Chinese characters with some special accents. It's like Boston English v.s. Atlanta English. Putonghua speakers have no problem understanding SichuanHua. Actually If you speak Mandarin, you should be fine in almost anywhere in China.
Chengdu is a financial and industry hub in western China, located in the center of Sichuan basin. Chengdu&Chongqing twin city metropolitan area has just been selected as China's new Special Economic Zone. This thousand year old city is undergoing an extreme make-over. Tons of opportunities....
As capital city of Sichuan province, Chengdu is the best place to explore exotic Sichuan cuisine.(its nothing like the Sichuan Beef you had in your local Chinese restaurant). Chengdu is also the gateway to Tibet , JiuZhaiGou and vast western China.
