Listed below are the most useful of what I have found so far.
Enjoy and when learning Polish, odwagi! (courage!)

All of these exist as of today 24.02.08, and most have been around for years.
A lot of it can be downloaded to your own computer for off-line use.

Serious Courses

A comprehensive first year University course. Lots of goodies - includes a good polish-english dictionary and a reference grammar. All in pdf format, free to download. This is the best and most useful resource i have yet found. I use it all the time.

Here you will find a serious look at polish grammar, bilingual in polish and English.
Sections are still under construction, but a very useful resource

...a course that he's starting to develop:
http://free.of.pl/g/grzegorj/kurs/index.html
...and his links page:

Some smaller courses

A short course in polish:
http://golem.umcs.lublin.pl/users/ppikuta/lessons/lessidx.htm

Elementary Poolish - A short on line course for beginners:
www.slavic.uiuc.edu/gladney/Elementary_Polish/Start.html

Some basic information resources

Some basic Polish vocabulary here:
zem.co.uk/polish/basicvoc.htm

There's some parallel polish and English texts here
www.let.rug.nl/%7Ehoutzage/polish.html
and sounds recordings of the texts in polish here, though the speaker speaks very fast...
http://odur.let.rug.nl/~houtzage/poldownloadsmp3.html

Another bit of parallel text in English and polish:
lonweb.org/daisy/ds-polish-lorna.htm

A summary of the polish cases:
www.lsa.umich.edu/slavic/dept/WebBasedLanguage/Polish/Grammar/CaseSummar y/Index.htm

There's a little summary of some Polish grammar here:
www.polish-translators.com/grammar.html

One of the best online dictionaries I have yet found:

http://portalwiedzy.onet.pl/tlumacz.html?qs=generous&tr=ang-auto
These sites offer useful Polish courses, but not for free:

transparent.com/languagepages/polish/polish.htm
byki.com/fls/poli/polish
rosettastone.com/en/individuals/languages/polish/?a=b
pimsleurapproach.com/learn-polish.asp

And if that's not enough and you want to translate some text to get the basic idea you can go here http://www.translatica.pl/

those translating sites could make no sense.
if you define the literal defenition it will seem very weird.
you need to ask someone polish before sending a letter to proof read it or it might turn out to be a disaster.

Polish is quite a hard language to learn. You can buy language CDs and such or just use a translator. If I was you make pen pals with people in Germanic countires. Germanic languages are much easier to learn.
